The former hosts both the Christmas Eve and New Year's Eve dinners, conceived by executive chef Iván Jiménez, who opts for delicacies such as beef carpaccio, Idiazábal cheese, seasonal mushrooms and slow-cooked egg and truffle (or its vegan version, with beetroot, watercress and pineapple dressing), scallop tiradito with sea urchin emulsion and grilled guinea fowl with trumpet sauce and grilled artichokes (in the image).
