Stirring. The paste formed from flour and butter in cooking is called roux. It is a basic. It is important to cook it for a couple of minutes but without it taking color.

Add the milk. As in any béchamel sauce, add the milk and stir with whisks without stopping. It does not matter if it is incorporated hot or cold if it is stirred with whisks.

Cook until the dough thickens well, stirring all the time. The longer it is on the stove, the creamier the croquettes will be.
