This soft cheese made from raw sheep's milk and vegetable rennet (thistle flower cynara cardunculus) is one of the gems of local cuisine in Cáceres, as well as nationally. It has Protected Designation of Origin (DOP), celebrating its 25th anniversary this year, with six dairies registered, all making the cheese in a traditional and artisanal way.
